Pecan-Bacon Butter Tartlets

Ingredients

  • Cooking spray
  • 6 slices thick-cut bacon
  • ¼ cup all-purpose flour, for dusting
  • 1 (14.1 oz) package rolled piecrusts
  • ¼ cup unsalted butter
  • 1 large egg
  • ½ cup brown sugar
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract (or 1 tablespoon bourbon)
  • ¼ teaspoon kosher salt
  • ½ cup toasted finely chopped pecans
  • ¼ teaspoon ground red pepper (optional)
  • Whipped topping (optional)

Steps

    1. Preheat oven to 350°F. Coat 12-cup muffin pan with spray. Chop bacon into small pieces (wash hands).
    2. Preheat large sauté pan on medium 2–3 minutes. Place bacon in pan; cook and stir 6–8 minutes until crisp. Remove bacon with slotted spoon and drain on paper towels.
    3. Meanwhile, dust work surface with flour; roll piecrusts to ⅛ inch thick. Cut 4-inch circles from crusts and press gently into muffin cups.
    4. Melt butter. Combine butter, egg, brown sugar, maple syrup, vanilla extract, salt, pecans, red pepper (if using), and cooled bacon; whisk until well blended. Spoon mixture into piecrust circles (about 2 tablespoons each). Bake 18–20 minutes until crust is golden and mixture is bubbly. Let stand 20 minutes to cool, then use butter knife around edges to release tartlets from cups. Top with whipped topping, if using. Serve.
