Pear, Blackberry, and Cranberry Crisp

Ingredients

  • Cooking spray
  • 6 medium firm ripe pears (about 3 lb)
  • 1 cup cranberries
  • 1 cup fresh blackberries
  • ½ cup granulated sugar
  • 2 tablespoons + 1 cup flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ cup old-fashioned oats
  • ⅔ cup brown sugar
  • ¼ teaspoon kosher salt
  • ½ cup cold unsalted butter
  • ½ cup sliced almonds
  • Vanilla ice cream, optional

Steps

    1. Preheat oven to 350°F. Coat 9-inch deep baking dish with spray. Prepare filling by peeling and coring pears; cut each lengthwise into eighths. Combine pears, berries, granulated sugar, and 2 tablespoons flour until blended; transfer to baking dish.
    2. Prepare topping by combining in large bowl: 1 cup flour, oats, brown sugar, and salt. Cut butter into small cubes, then add to flour mixture. Cut in butter with pastry blender (or fingertips) until mixture is crumbly; stir in almonds. Sprinkle topping over fruit mixture.
    3. Set baking dish on baking sheet (to catch any spills). Bake 18–20 minutes or until topping is golden and filling is thick and bubbly. Let stand 1 hour to cool. Serve warm with vanilla ice cream, if desired.
