Peanut Powder Breaded Pork Cutlets and Crunchy Citrus Salad

Ingredients

  • ½ cup salted roasted peanuts
  • 2 tablespoons sesame seeds
  • ½ cup peanut butter powder
  • ½ cup panko breadcrumbs
  • 2 teaspoons Everglades seasoning
  • 4 pork loin sirloin cutlets
  • Aluminum foil
...for salad
  • 2 tablespoons chives
  • ¼ cup shallots
  • 1 navel orange
  • 1 lime
  • 2 tablespoons aged sherry vinegar
  • ¼ cup extra-virgin olive oil
  • ¼ cup fried onions
  • ½ cup crunchy Asian noodles
  • ½ cup sesame sticks

Steps

    1. Prepare pork. Preheat oven to broil on HIGH; set oven rack to middle position. Add to bowl of food processor: peanuts, sesame seeds, peanut butter powder, breadcrumbs, and seasoning. Pulse 8–10 times to blend to a coarse texture; transfer to large shallow dish.
    2. Press pork cutlets into peanut mixture on both sides. Arrange coated pork evenly on foil-lined baking sheet. Broil 4–5 minutes, turn cutlets over and continue broiling 4–5 more minutes until browned and 145°F.
    3. Meanwhile prepare salad. Slice chives into ½-inch pieces; thinly slice shallot. Peel and segment orange and lime over a medium bowl (after removing segments, squeeze remaining citrus part for juice into same bowl). Remove segments and set aside. Add to juice: vinegar and olive oil; whisk until emulsified.
    4. To serve, top pork with citrus segments, fried onions, crunchy noodles, sesame sticks, and chives. Drizzle with sauce and serve.
