Ingredients
- ⅓ cup whole raw cashews
- ¾ cup old-fashioned oats
- ½ cup shredded, unsweetened coconut
- ¼ cup milled flaxseeds
- ¾ cup dried sweetened cranberries
- ½ cup semisweet chocolate morsels
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- ½ cup creamy organic peanut butter
- ⅓ cup agave nectar (or honey)
Steps
- Chop cashews coarsely. Combine in large bowl: cashews, oats, coconut, flax, cranberries, chocolate, vanilla, and salt.
- Place peanut butter and agave in microwave-safe dish. Microwave on HIGH 30 seconds or until warm. Add peanut butter mixture to oat mixture; stir to coat well, then chill 20 minutes.
- Scoop and roll mixture into 24 (1-inch) balls. Chill until ready to serve.
Chef's Tip: For deeper flavor, spread cashews, oats, coconut, and flax in single layer on baking sheet; bake at 350°F for 8–12 minutes until toasted. Cool completely, then proceed with recipe as written.
