Peanut Butter, Cashew, Coconut Snack Bites

Ingredients

  • ⅓ cup whole raw cashews
  • ¾ cup old-fashioned oats
  • ½ cup shredded, unsweetened coconut
  • ¼ cup milled flaxseeds
  • ¾ cup dried sweetened cranberries
  • ½ cup semisweet chocolate morsels
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • ½ cup creamy organic peanut butter
  • ⅓ cup agave nectar (or honey)

Steps

    1. Chop cashews coarsely. Combine in large bowl: cashews, oats, coconut, flax, cranberries, chocolate, vanilla, and salt.
    2. Place peanut butter and agave in microwave-safe dish. Microwave on HIGH 30 seconds or until warm. Add peanut butter mixture to oat mixture; stir to coat well, then chill 20 minutes.
    3. Scoop and roll mixture into 24 (1-inch) balls. Chill until ready to serve.

    Chef's Tip: For deeper flavor, spread cashews, oats, coconut, and flax in single layer on baking sheet; bake at 350°F for 8–12 minutes until toasted. Cool completely, then proceed with recipe as written.
