Peanut Butter–Banana Chia Pudding

Ingredients

  • 6 dried dates
  • ½ cup chia seeds
  • 2 cups unsweetened vanilla soy milk
  • 2 tablespoons peanut butter powder
  • 2 tablespoons agave nectar
  • 1 medium banana
  • 1 cup puffed rice cereal
  • 4 teaspoons pecan pieces

Steps

    1. Pit dates if needed, then chop coarsely and place in medium bowl; stir in chia seeds and milk. Chill 4 hours (or overnight), stirring after 2 hours.
    2. Place chia mixture, peanut butter powder, and agave nectar in blender; blend until thick and smooth.
    3. Chop banana coarsely. Divide one-half chia mixture among 4 serving dishes; top each with 2 tablespoons banana and 2 tablespoons puffed rice. Repeat layers. Top each pudding with 1 teaspoon pecans. Serve.
