Ingredients

  • 1 tablespoon canola oil
  • ½ cup chopped yellow onions
  • ¼ cup cider vinegar
  • ¼ cup sugar
  • ½ cup dried cherries (or dried fruit mix)
  • 1 ½ lb peaches (about 3–4), peeled, pitted, and cut into bite-size pieces

Steps

    1. Preheat medium saucepan on medium 1–2 minutes. Place oil in pan; add onions and cook until soft. Stir in vinegar, sugar, and cherries; bring to a boil.
    2. Reduce to a simmer; cook 3–4 minutes or until a syrup forms. Add peaches; simmer and stir 12–15 minutes or until peaches soften.
    3. Mash peaches slightly with back of spoon (thin with 2 tablespoons water, if needed). Salt and pepper to taste; serve with poultry or grilled meats.
Other Preparation Methods
    • Bake: Preheat oven to 350°F. Halve 2 peaches (remove pits); place cut side up in a 2-quart baking dish. Combine 2 tablespoons each chopped walnuts and brown sugar, ½ teaspoon apple pie spice, and 1 tablespoon softened unsalted butter; sprinkle over peaches. Bake 20–30 minutes or until peaches are tender. Serve with ice cream.
