Pastrami-Spiced Salmon Bagel Board
8 servings
30 minutes total

Ingredients

  • 2 teaspoons kosher salt
  • 1 tablespoon brown sugar
  • 2 tablespoons freshly cracked black pepper
  • 3 tablespoons ground coriander
  • 8 (6 oz) salmon fillets, skin removed (about 3 lb)
  • 3 tablespoons canola oil
  • 1 hothouse cucumber
  • 0.5 oz fresh dill
  • ¼ cup capers
  • 1 cup pickled red onions
  • 8 onion (or plain) bagels
  • 8 oz chive and onion cream cheese spread
  • ½ cup sliced fresh green onions

Steps

    1. Preheat grill on medium-low. Combine salt, sugar, pepper, and coriander. Coat salmon with oil, then with seasoning mixture (wash hands). Grill 4–5 minutes on each side until centers of fillets flake easily and are 145°F.
    2. Meanwhile, slice cucumber thinly. Pick dill fronds from stems. Drain capers and pickled red onions.
    3. Toast bagels if desired. Place salmon on large cutting board (or serving platter) and surround with cream cheese, green onions, pickled red onions, cucumbers, capers, dill, and bagels. Serve.

Chef's Tip: Instead of arranging ingredients on a board, prepare individual bagel sandwiches and serve on a platter.
