Pan-Seared Steaks with Marsala Sauce

Ingredients

  • 1 tablespoon fresh Italian parsley
  • 1 ½ lb boneless grilling steaks (such as ribeye, New York strip, or sirloin)
  • ½ teaspoon pepper
  • 1 ½ teaspoons kosher salt, divided
  • 4 tablespoons olive oil, divided
  • 2 tablespoons unsalted butter
  • 8 oz sliced fresh baby portabella mushrooms
  • 1 cup diced fresh yellow onions
  • 2 tablespoons all-purpose flour
  • ½ cup Marsala wine (or beef stock)
  • ½ cup no-salt-added beef stock (or broth)
  • 2 tablespoons balsamic glaze

Steps

    1. Chop parsley finely. Preheat large sauté pan on medium-high 2–3 minutes. Season steaks with pepper and 1 teaspoon salt (wash hands). Place 2 tablespoons oil in pan, then add steaks; cook 3–4 minutes on each side until steaks are 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Remove steaks from pan and let stand 5–10 minutes before slicing; temperature will rise 5–10°F during this time.
    2. Meanwhile, reduce heat to medium-low. Place butter and remaining 2 tablespoon oil in same pan, then stir in mushrooms, onions, and remaining ½ teaspoon salt; cook 6–7 minutes, stirring occasionally, until mushrooms and onions have softened.
    3. Add flour; cook and stir 1 minute. Stir in wine, stock, and glaze; simmer 3–4 minutes until sauce thickens. Slice steaks, top with sauce and parsley, and serve.

The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steak, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
