Ingredients
- 2 GreenWise turkey breasts, skin on
- 8 oz unsalted butter, room temperature (2 sticks)
- 4 sprigs thyme, leaves only
- 4 sprigs sage, stems only
- 4 sprigs rosemary, leaves only
- 2 small shallots, peeled and halved
- 8 cloves garlic
- 1 tablespoon kosher salt
- 2 teaspoons pepper
Steps
- Preheat oven to 325˚F.
- Arrange turkey breasts in roasting pan. Add to bowl of food processor: butter, thyme, sage, rosemary, shallots and garlic; pulse until blended. Rub butter under the skin and bottom side of breasts. Season turkey with salt and pepper.
- Bake 1 hour or until 165˚F (if turkey begins to brown too quickly, place an aluminum foil tent over breast to prevent further browning.) Remove from oven and transfer turkey to cutting board; let rest 10 minutes before slicing.
