Orange Apple Salad

Ingredients

  • 4 large navel oranges, segmented
    3 tablespoons honey
    2 teaspoons ginger spice paste
  • 1 Granny Smith (or tart) apple, thinly sliced
  • 1 Red Delicious (or sweet) apple, thinly sliced

Steps

    1. Peel oranges and remove white pith. Cut along membranes to remove segments (or cut into ½-inch slices). Place segments in serving bowl. Squeeze juice from membranes into small bowl (about 1 cup).
    2. Place juice, honey, and ginger in small saucepan on medium-low. Cook and stir 8-10 minutes or until consistency of syrup. Remove from heat; let stand to cool.
    3. Slice apples and add to oranges; toss with syrup until coated.

    Smoothie: Place in blender: 1 cup fresh squeezed orange juice, 2 tablespoons orange blossom honey, 1 cup ice cubes, and 2 cups vanilla ice cream; blend until smooth.
