Ingredients

  • ½ seedless cucumber
  • 1 yellow bell pepper
  • ⅓ bunch fresh cilantro
  • ¼ fresh jalapeño pepper
  • 2 cups frozen peaches
  • 1 clove garlic
  • ½ teaspoon kosher salt
  • 1 tablespoon apple cider vinegar
  • ¼ cup crumbled goat cheese
  • ½ cup lite coconut milk
  • 1 scoop vanilla whey protein powder
  • ½ cup cold water (or until desired consistency)

Steps

    1. Chop cucumber (½ cup), bell pepper (½ cup), and cilantro (⅓ cup) coarsely. Chop jalapeño finely, if using, discarding seeds and membranes.
    2. Combine all ingredients in blender (or food processor); blend until smooth (or desired consistency). Chill until ready to serve.
