Ingredients
- 4 oz mascarpone cheese
- 2 oz vanilla Greek yogurt
- ½ teaspoon vanilla extract
- 3 tablespoons unsalted butter
- 7 nectarines
- ¼ cup brown sugar
- ¼ cup amaretto
Steps
- Place mascarpone, yogurt, and vanilla in medium bowl; beat with electric mixer until smooth and airy. Chill mixture until ready for use.
- Preheat large sauté pan on medium 2–3 minutes. Remove pits from nectarines; cut nectarines into slices (about 4 cups). Melt butter in pan, then add nectarines and brown sugar; cook 10–12 minutes, stirring occasionally, or until sugar has dissolved. Stir in amaretto; cook 4–5 minutes or until sauce had reduced and fruit has softened.
- Divide mascarpone mixture evenly among 4 serving bowls; top with even amounts fruit and pan syrup. Serve.
