Multicooker Italian-Style Cheesy Beef Sandwiches

Ingredients

  • 1 cup mild banana pepper rings
  • 1 cup roasted bell pepper strips
  • 12 oz white pasteurized processed bar cheese
  • 1 boneless chuck roast (2–3 lb)
  • 2 teaspoons cracked pepper–garlic seasoning
  • 2 tablespoons canola oil
  • 5 oz sliced fresh sweet onions
  • 1 cup reduced-sodium beef broth
  • 2 teaspoons Italian seasoning
  • 8 hoagie rolls

Steps

    1. Preheat multicooker on SAUTÉ until hot. Drain banana peppers (reserving ¼ cup brine) and roasted peppers. Cube cheese. Cut roast into 3 equal pieces and coat with cracked pepper–garlic seasoning (wash hands).
    2. Pour oil into multicooker, then add beef. Cook 4 minutes on each side or until browned. Stir in onions, broth, Italian seasoning, and reserved brine.
    3. Place lid on multicooker and seal following manufacturer's instructions; cook on MEAT/STEW 45 minutes or until beef is 195°F (for shreddable). Let pressure release naturally 10 minutes, then release remaining pressure carefully. Shred beef; stir in cheese until melted, then stir in banana pepper rings and pepper strips. Serve in hoagie rolls.
Other Preparation Methods
    • Stew: Cut 2 lb boneless chuck roast into bite-size pieces; season with creole seasoning (wash hands). Preheat 2 tablespoons oil in Dutch oven on medium-high 2–3 minutes. Add meat; cook and stir 3–4 minutes until browned. Add 1 (15 oz) bag frozen okra soup mix, 2 cups spicy vegetable juice, and 2 cups water. Simmer on medium-low 1–2 hours until meat is tender and 200°F.
    • Braise: Preheat oven to 325°F. Place 3 lb boneless chuck roast in roasting pan; add 1 packet onion soup mix, 4 cups chopped yellow onions, and 2 cups beef broth. Cover with foil; bake 3–4 hours until meat is tender and 200°F.
