Ingredients
- 1 (10 oz) package GreenWise frozen quinoa with squash
- 1 (8 oz) package GreenWise frozen chickenless tenders
- 4 oz whole pitted dates (about 6)
- ½ cup GreenWise raw cashews
- 1 cup GreenWise canned low-sodium garbanzo beans
- ⅓ cup lemon vinaigrette
- 1 tablespoon GreenWise almond butter (or tahini)
- 1 ½ teaspoons curry powder
- ¼ teaspoon GreenWise ground cinnamon
- ¼ teaspoon ground red pepper
- 1 cup GreenWise matchstick carrots
- 4 cups GreenWise baby spinach
Steps
- Microwave quinoa and tenders following package instructions.
- Meanwhile, chop dates and cashews; drain and rinse garbanzo beans.
- Combine vinaigrette, almond butter, curry powder, cinnamon, and red pepper in large bowl; whisk to blend. Add quinoa, carrots, dates, spinach, chickpeas, and cashews to dressing; toss to coat. Serve tenders over salad.
