Mojo Pork Quesadilla

Ingredients

  • 1 (11-oz) package frozen platanos maduros
  • 4 oz pepper jack cheese, shredded
  • 1 small green bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 container Deli mojo pork (about 12 oz)
  • 6 multigrain tortillas (8–10 inch)
  • 1 teaspoon dried oregano
  • 3 tablespoons canola oil, divided
  • 3 tablespoons unsalted butter, divided
  • ½ cup salsa verde

Steps

    1. Microwave platanos maduros following package instructions; chop finely. Shred cheese (2 cups). Slice pepper and onion (1 cup each). Shred mojo pork finely.
    2. Place ⅓ cup cheese on one-half of each tortilla; top evenly with pork, onions, peppers, and maduros. Sprinkle with oregano; fold tortillas in half.
    3. Preheat large, nonstick sauté pan on medium 2–3 minutes. Place 1 tablespoon each oil and butter in pan. Add two quesadillas to pan; cook 1–2 minutes on each side or until hot and crispy. Repeat with remaining oil and butter to cook all quesadillas. Cut quesadillas into wedges. Serve with salsa verde for dipping.
