Ingredients
- ¼ bunch fresh cilantro
- 1 cup mojo marinade
- 2 teaspoons minced garlic
- 1 (3 ½ lb) whole chicken
Steps
- Preheat 2-sided tabletop grill. Chop cilantro leaves finely (¼ cup); place in large microwave-safe bowl. Stir in marinade and garlic. Reserve ¼ cup mixture for basting.
- Cut chicken into 8 pieces. Place chicken in large, microwave-safe bowl (wash hands); stir in remaining marinade mixture until evenly coated. Cover and microwave on HIGH 4 minutes, stirring once, or until chicken begins to get hot.
- Place chicken on grill (wash hands, discard marinade). Close lid and begin to grill chicken. Grill 18–20 minutes, brushing top of chicken with reserved marinade every 5 minutes, until chicken is 165°F. Serve.
