Ingredients

  • ¼ bunch fresh cilantro
  • 1 cup mojo marinade
  • 2 teaspoons minced garlic
  • 1 (3 ½ lb) whole chicken

Steps

    1. Preheat 2-sided tabletop grill. Chop cilantro leaves finely (¼ cup); place in large microwave-safe bowl. Stir in marinade and garlic. Reserve ¼ cup mixture for basting.
    2. Cut chicken into 8 pieces. Place chicken in large, microwave-safe bowl (wash hands); stir in remaining marinade mixture until evenly coated. Cover and microwave on HIGH 4 minutes, stirring once, or until chicken begins to get hot.
    3. Place chicken on grill (wash hands, discard marinade). Close lid and begin to grill chicken. Grill 18–20 minutes, brushing top of chicken with reserved marinade every 5 minutes, until chicken is 165°F. Serve.
    Note: If using a regular grill, double cook time, turning once.
