Ingredients
- 4 limes, for zest/juice
- 0.5 oz fresh mint
- 1 lb fresh watermelon chunks
- ½ cup tart apple slices
- ½ teaspoon rum extract
- ¼ cup powdered sugar
- ½ teaspoon kosher salt
- 4 cups mixed fresh berries (such as blackberries, blueberries, and raspberries)
- ⅓ cup toasted coconut chips
Steps
- Zest 1 lime (1 teaspoon), then juice all 4 limes (¼ cup). Chop mint finely (¼ cup). Cut watermelon and apples into bite-size pieces. Combine lime zest and juice, rum extract, sugar, and salt; whisk until sugar has dissolved.
- Combine watermelon, apples, berries, and mint in large bowl. Add lime mixture and stir gently to coat. Cover and chill 30 minutes (or until ready to serve). Top with coconut just before serving.
