Ingredients
- 1 teaspoon whole cloves
- 1 teaspoon whole black peppercorns
- ½ teaspoon whole fennel seeds
- 1 ½ tablespoons ground ginger
- 2 broken cinnamon sticks
- 2 tablespoons cardamom pods (or 1 teaspoon ground cardamom)
- 1 teaspoon freshly grated nutmeg
- 2 cups water
- 2 cups whole milk
- ¼ cup strong loose-leaf black tea
- ¼ cup brown sugar
Steps
- Place in small sauté pan: cloves, peppercorns, fennel seeds, ginger, cinnamon sticks, cardamom pods, and nutmeg; heat on medium-low 3–4 minutes, stirring frequently, until toasted. Remove from heat and let stand to cool. Transfer spices to spice grinder and process into powder.
- Combine water and milk in medium saucepan; bring to a boil on medium-high. Reduce heat to medium-low; add tea, brown sugar, and 1 tablespoon spice powder. Simmer 3–4 minutes until desired strength is reached. Strain through fine mesh strainer. Serve.
