Ingredients

  • 1 teaspoon whole cloves
  • 1 teaspoon whole black peppercorns
  • ½ teaspoon whole fennel seeds
  • 1 ½ tablespoons ground ginger
  • 2 broken cinnamon sticks
  • 2 tablespoons cardamom pods (or 1 teaspoon ground cardamom)
  • 1 teaspoon freshly grated nutmeg
  • 2 cups water
  • 2 cups whole milk
  • ¼ cup strong loose-leaf black tea
  • ¼ cup brown sugar

Steps

    1. Place in small sauté pan: cloves, peppercorns, fennel seeds, ginger, cinnamon sticks, cardamom pods, and nutmeg; heat on medium-low 3–4 minutes, stirring frequently, until toasted. Remove from heat and let stand to cool. Transfer spices to spice grinder and process into powder.
    2. Combine water and milk in medium saucepan; bring to a boil on medium-high. Reduce heat to medium-low; add tea, brown sugar, and 1 tablespoon spice powder. Simmer 3–4 minutes until desired strength is reached. Strain through fine mesh strainer. Serve.
    Note: Add more sugar and spice powder to taste. Store remaining spice powder in an airtight container at room temperature. (Makes ½ cup spice mixture).
