Manti with Tomato Butter Sauce

Ingredients

  • 3 cups flour (+more for dusting)
  • 2 large eggs
  • ½ cup (+2 tablespoons) warm water
  • 2 teaspoons kosher salt, divided
  • 3 tablespoons Italian parsley
  • 1 small sweet onion
  • 2 cloves garlic
  • 3 tablespoons fresh mint
  • ½ lb ground lamb
  • ¼ teaspoon pepper
  • 1 cup Greek yogurt
  • 4 tablespoons unsalted butter
  • 8 oz tomato sauce
  • 2 teaspoons paprika
  • Parchment paper
  • 6–10 tablespoons olive oil, divided

Steps

    1. Combine in medium mixing bowl: 3 cups flour, eggs, warm water, and ½ teaspoon salt. Mix until dough forms, then transfer dough to lightly floured work surface. Knead dough 8–10 minutes until smooth. Return dough to mixing bowl and cover bowl with clean kitchen towel; set aside 30 minutes.
    2. Finely chop parsley, onion, garlic, and mint. Combine in large bowl: parsley, onion, lamb, 1 teaspoon salt, and pepper until well blended. Combine in separate medium bowl: garlic, yogurt, and remaining ½ teaspoon salt until blended; chill until ready to serve.
    3. Melt butter in small saucepot over medium. Swirl pan a few times while cooking butter until browned, golden, and has small brown flecks. Stir in tomato sauce, and paprika until blended; reduce heat to low and keep warm.
    4. Transfer dough to lightly floured work surface and roll until 1⁄16-inch thick. Cut dough into 1 ½-inch squares. Spoon ½ teaspoon lamb filling into center of each square. Bring four corners of square up around filling and press seams together to seal. Arrange manti on parchment-lined baking sheet(s). Repeat process with remaining squares.
    5. Bring large pot of water to boil. Add manti (in batches) to boiling water and cook 8–10 minutes until cooked through and filling is 145°F. To serve, toss cooked manti with enough olive oil to lightly coat, then top with tomato-butter sauce. Garnish with yogurt mixture and mint.
