Ingredients
- 3 ripe mangos
- 1 shallot
- ⅓ cup golden raisins
- ⅓ cup brown sugar
- 1 tablespoon ginger stir-in paste
- 1 tablespoon hot pepper sauce
Steps
- Cut mangos sides away from pits; scoop out flesh and cut into 1-inch chunks (about 3 cups). Chop shallot finely.
- Combine all ingredients in medium saucepan on medium. Simmer 20 minutes, stirring occasionally, or until fruit begins to break down and sugar dissolves. Serve over cooked pork or chicken.
Other Preparation Methods
- Hot sauce: Cut sides of 2 ripe mangos away from pits; scoop out flesh and cut into 1-inch chunks (about 1 ½ cups). Cut 2 red chili peppers in half lengthwise. Place mangos and chilies in medium saucepan with 1 teaspoon kosher salt and ½ cup each apple cider vinegar and mango nectar. Simmer 15 minutes. Pour mixture into blender with 2 tablespoons water. Blend until smooth. Chill.
- Grill: Preheat grill (or grill pan) on medium. Cut sides of 2 ripe mangos away from pits; scoop out flesh and cut into 1-inch chunks (about 1 ½ cups). Thread onto 6-inch skewers and coat with cooking spray. Grill 3 minutes, turning often, or until grill-marked. Drizzle with honey and lime juice; sprinkle with kosher salt.
