Ingredients
- 1 lime, for zest
- 1 (8 oz) can pineapple rings in juice
- 2 lb boneless, skinless chicken breasts
- ¼ teaspoon kosher salt
- 1 ½ cups prepared mango smoothie
- ½ cup shredded coconut
- ½ cup sliced almonds
- Aluminum foil
Steps
- Preheat oven to 425°F. Zest lime (1 teaspoon). Drain pineapple.
- Arrange chicken in baking dish (wash hands); season with salt. Top with pineapple and smoothie. Sprinkle evenly with coconut, lime zest, and almonds. Cover dish with foil; bake 20 minutes.
- Remove foil; bake 8–10 more minutes until chicken is 165°F. Serve chicken with sauce.
