Mango Baked Chicken

Ingredients

  • 1 lime, for zest
  • 1 (8 oz) can pineapple rings in juice
  • 2 lb boneless, skinless chicken breasts
  • ¼ teaspoon kosher salt
  • 1 ½ cups prepared mango smoothie
  • ½ cup shredded coconut
  • ½ cup sliced almonds
  • Aluminum foil

Steps

    1. Preheat oven to 425°F. Zest lime (1 teaspoon). Drain pineapple.
    2. Arrange chicken in baking dish (wash hands); season with salt. Top with pineapple and smoothie. Sprinkle evenly with coconut, lime zest, and almonds. Cover dish with foil; bake 20 minutes.
    3. Remove foil; bake 8–10 more minutes until chicken is 165°F. Serve chicken with sauce.
