Ingredients

  • 1 medium sweet onion
  • 1 large sweet potato
  • 2 medium carrots
  • 10 pods okra
  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons vegetable oil
  • 1 tablespoon garlic stir-in paste
  • 4 cups water
  • 1 cup tomato sauce
  • 1 teaspoon kosher salt
  • 1 tablespoon chicken bouillon base
  • 2 habanero peppers
  • ½ cup natural peanut butter
  • Cooked white rice (optional for serving)

Steps

    1. Chop onion. Peel potato and carrots; cut potato, carrots, and okra into ½-inch pieces. Cut chicken into ½-inch pieces (wash hands).
    2. Heat oil in 6-quart stockpot on medium-high 3–4 minutes. Add onions, potatoes, carrots, okra, and garlic paste; cook 4–5 minutes, stirring occasionally, until vegetables are slightly tender.
    3. Stir in chicken, water, tomato sauce, salt, bouillon base, and whole habaneros. Bring to a boil, then reduce heat to medium-low and simmer 12–14 minutes.
    4. Stir in peanut butter until well blended. Simmer 3–4 more minutes until potatoes are fork-tender and chicken is 165°F. Remove and discard habaneros. Serve over rice, if using.
