Loaded Sweet Potato "Volley's"

Ingredients

  • 4 small sweet potatoes (about 1 lb)
  • 2 medium ripe bananas, peeled & sliced
  • ⅛ teaspoon kosher salt, divided (optional)
  • 4 teaspoons honey (or agave syrup)
  • 4 tablespoons almond butter
  • 1 cup fresh blueberries
  • 1 cup vanilla almond granola

Steps

    1. Poke sweet potatoes with a fork. Add 2 potatoes to microwave-safe bowl; microwave for 10–12 minutes or until fork tender. Repeat with remaining 2 potatoes.
    2. Slice potatoes down the center, two-thirds of the way through; set aside to cool slightly. Peel and slice bananas.
    3. Mash center of potatoes lightly with a fork (or to your desired texture) and sprinkle each with salt (if desired). Drizzle top of each potato with 1 teaspoon honey, and 1 tablespoon almond butter; then top evenly with banana, blueberries, and granola. Serve.
