Lentil Garden Salad in a Jar

Ingredients

For preparing the jars
  • 1 cup lentils
  • 2 lemons, for juice
  • ⅓ cup mojo marinade
  • 3 tablespoons water
  • 1 ½ teaspoons reduced-sodium rotisserie chicken seasoning
  • 1 teaspoon dried oregano
For the gift jars
  • 4 oz carrot sticks, chopped
  • 8 oz prediced fresh tomatoes
  • 8 oz trinity mix (fresh diced onions, bell peppers, celery)
  • 1 (15.5-oz) can reduced-sodium cannellini beans, drained and rinsed
  • ¾ cup diced pimientos (or roasted peppers)
  • ¾ cup prediced green onions
  • 6 (1-quart) mason jars with lids

Steps

  1. To prepare the jars
    1. Prepare lentils following package instructions. Squeeze lemons for juice (3 tablespoons). Drain lentils and chill 10 minutes to cool.
    2. Whisk in medium bowl: lemon juice, marinade, water, seasoning, and oregano until blended. (This is the dressing.)
    To assemble gift jar
    1. Chop carrots (1 cup). Layer even amounts of all ingredients evenly into jars starting with lentils and finishing with dressing*.
    2. Place lid tightly on jar and give as gift.
    3. NOTE*: The dressing can be added as the top layer or can be placed in a small 2-oz jar (or container) and given with gift jars.
