Ingredients
- 1 cup lentils
- 1 large carrot, chopped
- 1 lemon, for juice
- ¼ cup mojo marinade
- 2 tablespoons water
- 1 teaspoon dried oregano
- 8 oz prediced fresh tomatoes (1 ¼ cups)
- 1 cup trinity mix (fresh diced onions, bell peppers, celery)
- 1 cup reduced-sodium cannellini beans, drained/rinsed
- ½ cup diced pimientos
- ¼ cup prediced green onions
- 1 ½ teaspoons reduced-sodium rotisserie chicken seasoning
Steps
- Prepare lentils following package instructions. Chop carrot. Squeeze lemon for juice (2 tablespoons). Drain lentils and chill for 10 minutes.
- Whisk in large bowl: lemon juice, mojo, water, and oregano until blended.
- Stir remaining ingredients (including lentils) into dressing until well blended. Chill 30 minutes to blend flavors. Serve.
