Lemon-Sage Turkey Breast with Mushroom Gravy

Ingredients

  • 1 frozen turkey breast (4–6 lb)
  • 1 lemon, for wedges
  • 1 medium yellow onion
  • ½ cup dried cherries
  • ¼ cup unsalted butter
  • 1 tablespoon fresh sage
  • 1 ½ teaspoons kosher salt, divided
  • ¾ teaspoon pepper, divided
  • 4 oz gourmet blend mushrooms
  • ¼ cup all-purpose flour
  • 1 ½ cups chicken stock (or broth)
  • 2 tablespoons dry sherry (optional)

Steps

    1. Thaw turkey following package instructions.
    2. Preheat oven to 325°F. Quarter lemon and onion; place in roasting pan. Place in blender (or food processor): cherries, butter, sage, 1 teaspoon salt, and ½ teaspoon pepper; process until finely chopped. Slip fingers beneath turkey breast skin to loosen; lift skin gently and spread cherry mixture over meat; place turkey breast-side up on top of onions and lemons (wash hands).
    3. Bake 1 ½–2 hours until turkey is 165°F. Remove turkey from pan and let stand 10 minutes before slicing.
    4. Pour pan drippings into large measuring cup. Skim fat from drippings (about ¼ cup) and place in medium saucepan on medium. Add mushrooms; cook 3–4 minutes, stirring occasionally, until mushrooms are tender. Sprinkle in flour and remaining ½ teaspoon salt and ¼ teaspoon pepper; cook and stir 2 minutes.
    5. Combine stock, sherry (if using), and enough pan drippings to make 2 cups. Add mixture slowly to saucepan, stirring continuously until incorporated; simmer 4–5 minutes, stirring occasionally, until gravy thickens. Serve.
