Lemon-Rosemary Salmon

Ingredients

  • 1 lemon, for zest/juice
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh chives
  • ½ teaspoon pepper
  • ¼ teaspoon kosher salt
  • 1 ¼ lb fresh salmon fillet, skin on
  • 1 tablespoon honey
  • 1 tablespoon olive oil

Steps

    1. Preheat grill on medium. Zest lemon (2 teaspoons). Reserve lemon. Chop rosemary and chives finely. Combine lemon zest, rosemary, chives, pepper, and salt in small bowl.
    2. Place salmon skin-side down in shallow dish (wash hands). Brush with honey and oil, then sprinkle with zest mixture. Let stand 10 minutes (or up to 1 hour) to marinate.
    3. Place salmon skin-side down on grill; spoon any remaining marinade over salmon.
    4. Cover and grill 20–25 minutes until center of fillet flakes easily and is 145°F. Place salmon on serving platter. Squeeze lemon juice over salmon; serve.
