Ingredients
- 2 lb boneless, skinless chicken thighs (about 2 lb)
- ¼ cup lemon vinaigrette
- 2 tablespoons olive oil
- 1 teaspoon roasted garlic and herb seasoning
- 2 teaspoons minced garlic
- ½ teaspoon crushed red pepper
- Large zip-top bag
- 1 lemon, halved
- Cooking spray
Steps
- Preheat grill (or grill pan). Place chicken, vinaigrette, oil, seasoning, garlic, and red pepper in zip-top bag; seal bag and knead to coat. Let stand 30 minutes (or 1 hour) to marinate.
- Halve lemon. Remove chicken from bag (discard marinade). Coat chicken and lemon with spray (wash hands). Grill chicken 6–8 minutes per side until browned and 165°F.
- Grill lemon 2–3 minutes. Remove chicken and lemon from grill. Squeeze lemon over chicken when serving.
