Lemon-Herb Grilled Chicken

Ingredients

  • 2 lb boneless, skinless chicken thighs (about 2 lb)
  • ¼ cup lemon vinaigrette
  • 2 tablespoons olive oil
  • 1 teaspoon roasted garlic and herb seasoning
  • 2 teaspoons minced garlic
  • ½ teaspoon crushed red pepper
  • Large zip-top bag
  • 1 lemon, halved
  • Cooking spray

Steps

    1. Preheat grill (or grill pan). Place chicken, vinaigrette, oil, seasoning, garlic, and red pepper in zip-top bag; seal bag and knead to coat. Let stand 30 minutes (or 1 hour) to marinate.
    2. Halve lemon. Remove chicken from bag (discard marinade). Coat chicken and lemon with spray (wash hands). Grill chicken 6–8 minutes per side until browned and 165°F.
    3. Grill lemon 2–3 minutes. Remove chicken and lemon from grill. Squeeze lemon over chicken when serving.
