Late Night Cheeseburgers

Ingredients

  • 2 cups coleslaw mix
  • ¼ cup lemon vinaigrette
  • ½ teaspoon kosher salt
  • ½ cup roasted red peppers
  • 1 ½ lb ground chuck
  • 1 cup shredded cheddar cheese
  • ½ cup crispy fried onions
  • Cooking spray
  • ½ cup sweet and spicy barbecue sauce
  • 4 hamburger buns

Steps

    1. Preheat grill (or grill pan) on medium-high. Combine coleslaw, vinaigrette, and salt until blended; set aside. Chop peppers.
    2. Combine ground chuck, cheddar, onions, and peppers until blended. Form meat into 4 patties (wash hands). Coat patties on both sides with spray and place on grill; grill 4–5 minutes on each side until burgers are grill-marked and 160°F.
    3. Spread 2 tablespoons barbecue sauce on insides of each bun. Place burgers on bottom halves of buns; top each with ½ cup coleslaw and top half of bun. Serve.
