Lasagna Casserole

Ingredients

  • 1 (10 oz) package sliced fresh peppers and onions
  • 16 oz block whole milk mozzarella cheese
  • 3 tablespoons extra-virgin olive oil
  • 1 lb bulk hot (or mild) Italian sausage
  • ¼ teaspoon kosher salt
  • ½ teaspoon dried oregano
  • 3 tablespoons garlic stir-in paste
  • 1 (32 oz) jar vodka (or marinara) pasta sauce
  • Cooking spray
  • 1 lb lasagna noodles
  • ½ cup grated Parmesan cheese
  • 1 cup ricotta cheese
  • 0.5 oz fresh basil

Steps

    1. Bring water to a boil for pasta. Chop peppers and onions coarsely. Grate mozzarella (about 4 cups).
    2. Preheat large sauté pan on medium 2–3 minutes. Place oil and sausage in pan; brown 4–6 minutes, stirring to crumble meat, until no pink remains and sausage is 160°F.
    3. Stir in peppers, onions, salt, oregano, and garlic paste. Cook 4–6 minutes, stirring occasionally, until peppers begin to soften. Remove from heat and stir in pasta sauce.
    4. Preheat oven to 425°F; coat 13- x 9-inch baking dish with spray. Break lasagna noodles in half; cook and drain following package al dente instructions.
    5. Combine lasagna noodles, pasta sauce mixture, Parmesan, and 1 cup mozzarella; spread mixture evenly in baking dish. Top with remaining 3 cups mozzarella, then dollop ricotta evenly over top of lasagna.
    6. Bake 20–30 minutes until cheese has melted, and edges are lightly crisp. Let rest 5 minutes. Chop basil coarsely and sprinkle over lasagna. Cut into squares; serve.

    Chef's Tip: For faster cook time, use 18- x 13-inch baking sheet in place of baking dish.
