Ingredients
- 3 lb chuck flanken-style beef ribs
- 1 cup brown sugar
- Large zip-top bag
- 1 small yellow onion
- 1 cup soy sauce
- ½ cup water
- ¼ cup mirin
- ¼ cup garlic stir-in paste
- 2 tablespoons sesame oil
- ¼ teaspoon pepper
- 2 tablespoons sesame seeds
Steps
- Sprinkle ribs with sugar and rub to coat well, then place in bag (wash hands). Chop onion finely.
- Whisk in medium bowl: onions, soy sauce, water, mirin, garlic paste, sesame oil, and pepper. Add marinade to bag, press out excess air, and seal. Turn bag over several times to coat evenly. Chill 1 hour (or overnight).
- Heat grill (or grill pan) on medium-high. Remove ribs from bag (discard marinade). Grill 3–4 minutes on each side until grill-marked and 145°F. Sprinkle with sesame seeds and serve.
