Korean-Style Beef Short Ribs

Ingredients

  • 3 lb chuck flanken-style beef ribs
  • 1 cup brown sugar
  • Large zip-top bag
  • 1 small yellow onion
  • 1 cup soy sauce
  • ½ cup water
  • ¼ cup mirin
  • ¼ cup garlic stir-in paste
  • 2 tablespoons sesame oil
  • ¼ teaspoon pepper
  • 2 tablespoons sesame seeds

Steps

    1. Sprinkle ribs with sugar and rub to coat well, then place in bag (wash hands). Chop onion finely.
    2. Whisk in medium bowl: onions, soy sauce, water, mirin, garlic paste, sesame oil, and pepper. Add marinade to bag, press out excess air, and seal. Turn bag over several times to coat evenly. Chill 1 hour (or overnight).
    3. Heat grill (or grill pan) on medium-high. Remove ribs from bag (discard marinade). Grill 3–4 minutes on each side until grill-marked and 145°F. Sprinkle with sesame seeds and serve.
