Ingredients
- 1 tablespoon ghee (clarified butter)
- ½ cup basmati rice
- 4 cups whole milk
- ½ teaspoon kosher salt
- ½ teaspoon ground cardamom
- 1 cinnamon stick
- ½ cup granulated sugar
- ½ cup roasted, shelled pistachios
- 6 large, pitted dates
Steps
- Heat ghee in large saucepan on medium 2–3 minutes. Add rice to pan; cook and stir 2 minutes or until toasted.
- Reduce heat to low. Stir in milk, salt, cardamom, and cinnamon stick. Bring to a simmer; simmer 18–20 minutes, stirring occasionally, until rice is tender and mixture has thickened. Stir in sugar; cook 4–5 more minutes, stirring occasionally, until sugar is dissolved. Remove from heat; let stand to cool 5 minutes.
- Meanwhile, chop pistachios finely and chop dates coarsely. Divide rice mixture among serving bowls. Garnish with pistachios and dates; serve.
