Kentucky-Style Blackberry Jam Cake

Ingredients

  • ½ cup unsalted butter
  • Cooking spray
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon apple pie spice
  • ½ teaspoon kosher salt
  • 1 cup chopped pecans
  • 1 cup raisins
  • 1 cup brown sugar
  • 1 cup seedless blackberry jam
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup whole buttermilk
  • ½ cup bourbon (optional)
  • Southern-Style Caramel Frosting

Steps

    1. Set butter out to soften. Preheat oven to 350°F. Coat 13- x 9-inch baking dish with spray. Combine flour, baking soda, pie spice, salt, pecans, and raisins until blended.
    2. Place butter, sugar, and jam in large bowl. Beat with electric mixer until blended and fluffy. Beat in eggs and vanilla until blended. Mix in one-half flour mixture, then one-half buttermilk; repeat with remaining half flour mixture and buttermilk until batter forms.
    3. Spread batter evenly into baking dish. Bake 35–45 minutes until golden and toothpick inserted in center comes out clean. Pour bourbon over hot cake, if using, then let stand to cool completely before frosting. Serve.
