Kentucky Hot Brown–Style Sandwiches

Ingredients

  • Nonstick aluminum foil
  • 2 oz Gruyère (or aged cheddar) cheese
  • 4 (1-inch-thick) slices bakery English muffin (or Italian) bread
  • 1 tablespoon fresh Italian parsley
  • 2 plum tomatoes, divided
  • 4 slices fully cooked bacon
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon white pepper
  • ⅛ teaspoon ground red pepper
  • ½ teaspoon kosher salt
  • 8 oz sliced deli roasted turkey breast
  • 8 oz sliced deli Tavern ham

Steps

    1. Preheat oven to 400°F; line baking sheet with foil. Shred cheese. Arrange bread on prepared baking sheet. Chop parsley and 1 tomato finely (½ cup); slice remaining tomato thinly (about 8 slices). Chop bacon coarsely.
    2. Melt butter in medium saucepan on low. Add flour; cook and stir 1 minute. Add milk, whisk to combine, and bring to a simmer. Stir in nutmeg, white pepper, red pepper, and salt; simmer 2 minutes, stirring occasionally. Remove from heat, add cheese, and whisk until melted and smooth.
    3. Arrange turkey, ham, and tomato slices evenly over bread. Top each sandwich with ¼ cup cheese sauce (reserve remaining 1 cup sauce for another use); bake 4–5 minutes until cheese sauce is bubbly.
    4. Preheat broiler on HIGH. Broil 1–2 minutes until sauce begins to lightly brown. Garnish with bacon, diced tomatoes, and parsley. Serve.
