Ingredients
- 3 cups chopped fresh kale
- 3 tablespoons lemon juice
- ½ teaspoon kosher salt
- 1 medium carrot
- 1 medium, sweet apple
- 2 cups sliced (or shredded) cooked chicken (10–12 oz)
- 3 tablespoons reduced-fat mayonnaise
- ½ teaspoon Dijon mustard
- ¼ cup sliced fresh green onions
Steps
- Remove and discard any stem pieces from kale. Chop leaves coarsely and place in large bowl; drizzle with lemon juice and sprinkle with salt. Use hands to massage kale mixture 30 seconds or until slightly softened; set aside.
- Peel carrot, then shred using box grater. Core apple; chop apple and chicken coarsely. Combine mayonnaise and mustard.
- Add carrots, apples, onions, and chicken to kale mixture; stir in mayonnaise mixture until thoroughly combined. Serve.
