Jerk Pork Tenderloin with Fried Avocado Slices

Ingredients

  • 1 pork tenderloin (about 1 lb)
  • 1 tablespoon + ¼ cup canola oil
  • 1 ½ tablespoons Jamaican-style jerk seasoning, divided
  • 1 (8 oz) package red beans and rice blend
  • 1 lime, for wedges
  • 2 ripe Hass avocados
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs

Steps

    1. Preheat oven to 400°F. Coat pork with 1 tablespoon each oil and jerk seasoning, then place on baking sheet (wash hands); bake 18–20 minutes until 145°F.
    2. Meanwhile, cook beans and rice following package instructions. Cut lime into wedges. Halve avocado, scoop out flesh, and slice.
    3. Place flour in shallow bowl, beat eggs in second shallow bowl, and place breadcrumbs in third bowl. Dredge avocado slices in flour (coating both sides), dip into eggs (letting excess drip off), then dip into bread crumbs, pressing with fingertips to adhere (wash hands).
    4. Preheat remaining ¼ cup oil in large sauté pan on medium-high 3–4 minutes. Place avocado slices into oil, in batches if needed; fry 2–3 minutes on each side until coating is golden. Remove from oil, place on paper towel–lined plate, and season with remaining ½ tablespoon jerk seasoning.
    5. Slice pork and serve over rice and beans, with avocado slices and lime wedges on the side.
