Ingredients

  • 2 cups all-purpose flour
  • ⅓ cup fine cornmeal
  • ⅓ cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground nutmeg
  • 1 cup whole milk
  • 2 cups vegetable oil, for frying

Steps

    1. Combine in large bowl: flour, cornmeal, sugar, baking powder, salt, and nutmeg. Stir in milk until shaggy dough forms, then knead until dough comes together. Cover with damp towel and let stand 20 minutes.
    2. Meanwhile, place oil in large saucepan and heat to 350°F. Divide dough into 12 equal balls, then roll each ball into 4-inch-long log.
    3. Fry dough logs, in batches, 3–5 minutes until outsides are golden and centers are set. Remove from oil with slotted spoon; repeat with remaining dough. Let stand to cool 5 minutes before serving.

Do not eat raw dough/batter.
