Jalapeño Popper Burgers

Ingredients

  • ½ medium red onion
  • 8 frozen jalapeño poppers
  • 4 (6 oz) ground beef patties
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 4 slices pepper Jack cheese (about 4 oz)
  • 8 teaspoons jalapeño cream cheese spread
  • 4 hamburger buns
  • 1 cup baby spinach leaves

Steps

    1. Preheat oven to 450°F. Preheat grill pan (or grill) on medium-high. Slice onion thinly. Bake jalapeños poppers following package instructions.
    2. Season patties with salt and pepper and place in pan (wash hands); cook 3–4 minutes on each side until burgers are grill-marked and 160°F. Top each patty with 1 slice cheese during last minute of cook time.
    3. Spread 2 teaspoons cream cheese inside each bun. Place burger patties on bottom halves of buns; top with onions, spinach, jalapeño poppers, and top halves of buns. Serve.
