Indian-Style Gulab Jamun

Ingredients

  • 3 cups vegetable oil, for frying
  • 2 tablespoons unsalted butter
  • ¾ cup powdered milk
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • 6–8 tablespoons whole milk
  • 1 lemon, for zest/juice
  • 2 cups water
  • 2 cups sugar
  • 1 teaspoon ground cardamom
  • ½ teaspoon vanilla extract
  • 3 tablespoons roasted, shelled pistachios

Steps

    1. Place oil in large Dutch oven and heat to 300°F. Melt butter. Combine butter, powdered milk, flour, and baking powder in medium bowl. Add whole milk 1 tablespoon at a time, mixing until sticky dough forms (may not use all milk). Cover and let stand 10 minutes.
    2. Meanwhile, zest lemon (1 teaspoon), then juice (2 teaspoons). Place water and sugar in medium saucepan on medium-low; whisk to blend. Simmer 4–5 minutes until sugar has dissolved. Remove from heat, then stir in lemon zest and juice, cardamom, and vanilla.
    3. Scoop (or form) dough into 1-inch balls. Place balls carefully in oil. Fry 1–2 minutes, stirring gently, until golden. Remove from oil and place directly into syrup; soak 2 hours. Chop pistachios finely. Serve dough balls with syrup, sprinkled with pistachios. May be served warm or at room temperature. (Makes about 6 balls.)
