Ingredients
- 3 cups vegetable oil, for frying
- 2 tablespoons unsalted butter
- ¾ cup powdered milk
- ½ cup all-purpose flour
- ½ teaspoon baking powder
- 6–8 tablespoons whole milk
- 1 lemon, for zest/juice
- 2 cups water
- 2 cups sugar
- 1 teaspoon ground cardamom
- ½ teaspoon vanilla extract
- 3 tablespoons roasted, shelled pistachios
Steps
- Place oil in large Dutch oven and heat to 300°F. Melt butter. Combine butter, powdered milk, flour, and baking powder in medium bowl. Add whole milk 1 tablespoon at a time, mixing until sticky dough forms (may not use all milk). Cover and let stand 10 minutes.
- Meanwhile, zest lemon (1 teaspoon), then juice (2 teaspoons). Place water and sugar in medium saucepan on medium-low; whisk to blend. Simmer 4–5 minutes until sugar has dissolved. Remove from heat, then stir in lemon zest and juice, cardamom, and vanilla.
- Scoop (or form) dough into 1-inch balls. Place balls carefully in oil. Fry 1–2 minutes, stirring gently, until golden. Remove from oil and place directly into syrup; soak 2 hours. Chop pistachios finely. Serve dough balls with syrup, sprinkled with pistachios. May be served warm or at room temperature. (Makes about 6 balls.)
