Hummus Roll-Ups

Ingredients

  • 1 seedless cucumber
  • 1 small Granny Smith apple
  • 8 (6-inch) flour tortillas
  • ½ cup sriracha carrot (or other flavor) hummus

Steps

    1. Cut cucumber in half lengthwise; slice thinly (1 ½ cups). Core and quarter apple; cut each quarter into 4 slices.
    2. Microwave tortillas on HIGH 12–15 seconds to soften. Spread 1 tablespoon hummus on each tortilla. Arrange cucumbers and apples down centers of tortillas; fold in ends and roll around filling.
    3. Place in airtight container and chill 30 minutes (or overnight). Cut each roll-up in half and serve.
