Hummingbird Cake Bites

Ingredients

  • Cooking spray
  • 1 (8 oz) can crushed pineapple in juice
  • 1 ripe banana
  • 1 (15.25 oz) package spice cake mix
  • ½ cup vegetable oil
  • ½ cup water
  • 2 large eggs (or ½ cup egg substitute)
  • ½ cup chopped pecans
  • ½ cup dried pineapple pieces
  • ½ cup sweetened, shredded coconut
  • Parchment paper
  • 4 oz cream cheese frosting
  • 3 (10 oz) bags white melting wafers

Steps

    1. Preheat oven to 350°F. Coat 2 (8-inch) round cake pans with spray. Drain pineapple. Mash banana in large bowl; add dry cake mix, drained pineapple, ½ cup oil, ½ cup water, and 2 eggs. Beat with electric mixer on LOW until just combined. Increase speed to MEDIUM and beat 2 more minutes. Pour batter evenly into cake pans. Bake 30–35 minutes until toothpick inserted in center comes out clean. Cool cakes in pans on wire rack 30 minutes.
    2. Meanwhile, chop pecans, dried pineapple, and coconut finely and combine in small bowl; set aside. Line baking sheet with parchment paper. Remove cakes from pans and crumble onto baking sheet. Chill 30 minutes or until cold.
    3. Break cooled cake pieces into fine crumbs in large bowl; add frosting and stir until dough forms. Scoop (or form) dough into 2-inch cake balls and place on baking sheet. Press sides and tops to make cubes, if desired. Freeze cake 15 minutes or until firm.
    4. Decorate cake bites. Melt wafers following package instructions (1 bag at at time). Place 1 cake bite on a fork and scoop coating over top, rotating to cover entirely. Tap fork on bowl to remove excess coating; remove cake bite from fork carefully and return to baking sheet. Repeat with remaining cake bites and wafers. Garnish tops of cake bites with pecan mixture before coating sets. Chill until coating sets; serve.
    Chef's Tip: Don't want to make small bites? Spread frosting on cake and top with pecan mixture. No need to dip into melted wafers. (Makes 12 servings.)
