Huli Huli–Style Grilled Chicken Skewers

Ingredients

  • 4 cloves garlic
  • 2 lb boneless, skinless chicken thighs
  • 12 (6-inch) wooden skewers
  • ½ cup brown sugar
  • ⅔ cup ketchup
  • ⅔ cup reduced-sodium soy sauce
  • 2 tablespoons pineapple juice
  • 1 teaspoon ginger stir-in paste
  • Cooking spray

Steps

    1. Chop garlic finely. Cut chicken into 1-inch pieces and thread onto skewers; arrange skewers in baking dish (wash hands).
    2. Combine in medium bowl: garlic, brown sugar, ketchup, soy sauce, pineapple juice, and ginger paste; reserve ½ cup marinade. Pour remaining marinade over chicken. Let stand 1 hour (or chill overnight) to marinate.
    3. Preheat grill (or grill pan) on medium. Remove skewers from baking dish (discard marinade) and coat with spray. Grill chicken 10–12 minutes, turning occasionally, until chicken is grill-marked and 165°F. Baste chicken with reserved sauce during last 2 minutes of grill time. Serve.
