Ingredients
- 4 cloves garlic
- 2 lb boneless, skinless chicken thighs
- 12 (6-inch) wooden skewers
- ½ cup brown sugar
- ⅔ cup ketchup
- ⅔ cup reduced-sodium soy sauce
- 2 tablespoons pineapple juice
- 1 teaspoon ginger stir-in paste
- Cooking spray
Steps
- Chop garlic finely. Cut chicken into 1-inch pieces and thread onto skewers; arrange skewers in baking dish (wash hands).
- Combine in medium bowl: garlic, brown sugar, ketchup, soy sauce, pineapple juice, and ginger paste; reserve ½ cup marinade. Pour remaining marinade over chicken. Let stand 1 hour (or chill overnight) to marinate.
- Preheat grill (or grill pan) on medium. Remove skewers from baking dish (discard marinade) and coat with spray. Grill chicken 10–12 minutes, turning occasionally, until chicken is grill-marked and 165°F. Baste chicken with reserved sauce during last 2 minutes of grill time. Serve.
