Ingredients
- Parchment paper
- 6 slices Bakery brioche bread
- 1 large tomato
- 6 oz Parmesan cheese
- 6 slices thick-cut bacon
- ¼ cup salted butter
- 2 teaspoons Worcestershire sauce
- ½ teaspoon pepper
- 1 tablespoon poppy seeds (optional)
- 1 tablespoon + 1 teaspoon Dijon mustard
- 2 tablespoons all-purpose flour
- 3 cups whole milk
- 1 lb sliced Deli roasted turkey breast
- 2 cups baby arugula
- 2 tablespoons sherry vinegar
Steps
- Preheat oven to 375°F. Line baking sheet with parchment paper. Cut 2 slices bread into 1-inch cubes. Chop tomato coarsely. Grate cheese. Cut bacon into ½-inch pieces (wash hands).
- Melt butter, then add Worcestershire sauce, pepper, poppy seeds (if using), and 1 tablespoon mustard; whisk until blended. Coat both sides of bread slices and bread cubes evenly with butter mixture; arrange in single layer on baking sheet. Bake 8–10 minutes, flipping halfway through bake time, until toasted. Remove from oven, remove bread cubes from baking sheet, and set aside.
- Meanwhile, place bacon in medium sauté pan on medium. Cook 12–15 minutes, stirring occasionally, until crisp. Remove bacon, leaving 2 tablespoons drippings in pan.
- Sprinkle flour into bacon drippings. Whisk 2–3 minutes until mixture is smooth and pale yellow. Pour milk in slowly, whisking continuously, until mixture is blended and smooth. Stir in cheese (in batches) and remaining 1 teaspoon mustard until sauce is smooth and cheese has melted.
- Shingle turkey evenly over bread slices. Pour cheese sauce evenly over turkey. Bake 3–5 minutes until sauce has browned lightly and turkey is 165°F.
- Place in bowl: arugula, tomatoes, bread cubes, and bacon. Drizzle with vinegar; toss to coat. Serve hot sandwiches topped with salad mixture.
