Honey–Key Lime Buttermilk Pie

Ingredients

  • 2 tablespoons unsalted butter
  • 1 frozen deep-dish piecrust
  • ¼ cup sugar
  • ¾ cup whole buttermilk
  • ½ cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon kosher salt
  • 3 tablespoons all-purpose flour
  • ¼ cup Key lime juice
  • Whipped cream (optional for serving)

Steps

    1. Set butter out to soften. Thaw piecrust. Preheat oven to 400°F. Pierce piecrust lightly with fork and place on baking sheet. Bake 5 minutes, then let stand to cool.
    2. Beat butter and sugar with electric mixer until pale yellow and fluffy. Beat in buttermilk, honey, eggs, vanilla, and salt until blended. Beat in flour and lime juice until blended. Pour filling into piecrust.
    3. Bake 10 minutes, then reduce oven to 350°F. Bake 15–20 minutes until edges are golden and center is set. Let stand to cool completely before serving with whipped cream, if using.
