Ingredients
- 1 jalapeño pepper
- 1 cup honeydew chunks
- 1 mint leaf (+ additional, optional for garnish)
- ½ teaspoon ginger spice paste
- 2 oz rum
- 1 tablespoon lime juice
- ½ oz simple syrup
- Splash of soda water
Steps
- Slice jalapeño thinly, removing seeds and membranes for less heat if desired. Muddle honeydew, mint, ginger, and a few jalapeño slices in cocktail shaker. (Vary amount of jalapeño to taste.)
- Add ice, rum, lime juice, and simple syrup. Shake well; strain into an ice-filled Collins glass.
- Top with soda water. Garnish with additional mint, if desired.

Substitute tequila for the rum and cilantro for the mint.
