Honey Mustard Grilled Pork Chops

Ingredients

  • 1 lime, for juice
  • ¼ cup honey mustard dressing
  • 2 tablespoons stone-ground mustard
  • 2 tablespoons hot (or regular) honey
  • 4 (1-inch-thick) boneless pork loin chops (about 1 ½ lb)
  • 1 teaspoon Greek seasoning
  • 1 tablespoon olive oil
  • ¼ cup sliced fresh green onions
  • ¼ cup crispy fried onions
  • Corn on the cob (optional)

Steps

    1. Preheat grill (or grill pan) on medium. Juice lime (1 tablespoon). Combine lime juice, dressing, mustard, and honey in small bowl.
    2. Coat pork with seasoning and oil (wash hands). Place pork on grill; cook 3–4 minutes on each side until grill-marked and 145°F. Remove from grill, brush with mustard mixture, and let stand 5 minutes.
    3. Sprinkle pork with green onions and fried onions, then top with remaining mustard mixture. Serve with corn on the cob, if using.
