Honey-Brined Grilled Shrimp

Ingredients

  • 16 oz unpeeled jumbo pink shrimp
  • 1 cup water
  • 2 tablespoons kosher salt
  • 6 tablespoons honey, divided
  • 2 cups ice cubes
  • 3 tablespoons fresh Italian parsley
  • 2 tablespoons fresh oregano
  • 4 cloves garlic
  • 2 shallots
  • 1 small Fresno red chile pepper (optional)
  • 24 (6-inch) wooden skewers
  • Cooking spray
  • 3 tablespoons red wine vinegar
  • ¼ cup extra-virgin olive oil

Steps

    1. Thaw shrimp (if needed). Devein shrimp and remove legs (if desired); do not remove shells. Microwave water in microwave-safe, 4-quart dish on HIGH 2 minutes or until hot. Add salt and 3 tablespoons honey to water; whisk until salt dissolves. Add ice cubes and stir until mixture cools. Add shrimp; cover and chill 20 minutes.
    2. Preheat grill (or grill pan) on medium-high. Chop parsley, oregano, garlic, and shallots (¼ cup) finely. Slice Fresno chili thinly, if using (remove seeds and membranes, if desired). Remove shrimp from brine (discard brine) and pat dry. Arrange 4 shrimp on flat surface, nesting together horizontally. Lay hand flat on shrimp and push pointed end of skewer through center of each shrimp, connecting them. Take second skewer and push through shrimp ½ inch from first skewer. (This keeps shrimp from spinning when turned on the grill.) Repeat with remaining shrimp (wash hands).
    3. Brush shrimp with 1 tablespoon honey and coat with cooking spray. Place shrimp on grill; cook 2–3 minutes on each side until pink and opaque.
    4. Combine vinegar and remaining 2 tablespoons honey in small bowl; gradually add oil, whisking to blend. Stir in parsley, oregano, shallots, and garlic. Place shrimp on platter, pour vinegar mixture over shrimp, and top with chilies, if using. Serve.
    NOTE: To bake, place shrimp on foil-lined baking sheet, brush with honey, and coat with cooking spray. Bake at 425°F 5–6 minutes until shrimp are pink and opaque.
