Herbed Matzo Salmon with Italian-Style Green Sauce

Ingredients

  • Nonstick aluminum foil
  • 1 lb fresh asparagus
  • 4 (6 oz) salmon fillets, skin removed (about 1 ½ lb)
  • ½ teaspoon pepper
  • 1 teaspoon kosher salt, divided
  • 1 shallot
  • 1 lemon, for juice
  • 2 cloves garlic
  • 1 tablespoon capers
  • 1 teaspoon anchovy paste (or Worcestershire sauce)
  • ¼ teaspoon crushed red pepper (optional)
  • 1 bunch fresh Italian parsley, divided
  • 9 tablespoons extra-virgin olive oil, divided
  • ½ cup matzo meal

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Remove and discard tough root ends from asparagus; spread asparagus on baking sheet in single layer. Season salmon with pepper and ½ teaspoon salt; arrange on top of asparagus (wash hands).
    2. Chop shallot and juice lemon (2 tablespoons). Combine in food processor bowl (or blender): shallots, garlic, capers, anchovy paste, lemon juice, red pepper (if using), and remaining ½ teaspoon salt; pulse until chopped finely. Scrape down bowl and add ¾ bunch parsley (leaves only); pulse several times until parsley is chopped finely. Pour in 6 tablespoons oil slowly, with processor running, until mixture is blended.
    3. Chop remaining ¼ bunch parsley finely (¼ cup) and place in medium bowl. Add matzo meal and remaining 3 tablespoons oil; stir to combine. Top salmon evenly with matzo mixture; bake 10–12 minutes until matzo mixture is golden and centers of fillets flake easily and are 145°F. Serve salmon and asparagus topped with green sauce.
