Ingredients
- 3 lb whole beef tenderloin
- 2 teaspoons steak seasoning
- 2 tablespoons fresh thyme, finely chopped
- 1 large shallot, finely chopped
- 3 cloves garlic, finely chopped
- 2 teaspoons fresh lemon zest
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
Steps
- Preheat oven to 450°F. Season meat with steak seasoning. Combine remaining ingredients; rub herb mixture over meat and place in roasting pan.
- Place meat in oven; immediately reduce oven temperature to 375°F. Roast 35-45 minutes or until meat is 145°F (for medium rare). Let roast stand 10 minutes to rest before slicing.
- Other Preparation Methods
- Grill: Preheat grill on HIGH (500°F). Season 3 lb whole beef tenderloin with 1 tablespoon oil and 2 teaspoons garlic/herb seasoning. Place meat over direct heat; grill 3-4 minutes on each side or until browned. Reduce heat on grill to medium. Place meat over indirect heat and close lid (or cover); grill 40-45 more minutes, turning occasionally, or until meat is 145°F for medium rare.
