Herb-Roasted Beef Tenderloin

Ingredients

  • 3 lb whole beef tenderloin
  • 2 teaspoons steak seasoning
  • 2 tablespoons fresh thyme, finely chopped
  • 1 large shallot, finely chopped
  • 3 cloves garlic, finely chopped
  • 2 teaspoons fresh lemon zest
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard

Steps

    1. Preheat oven to 450°F. Season meat with steak seasoning. Combine remaining ingredients; rub herb mixture over meat and place in roasting pan.
    2. Place meat in oven; immediately reduce oven temperature to 375°F. Roast 35–45 minutes until meat is 145°F (for medium rare). Rest 10 minutes before slicing.
Other Preparation Methods
    • Grill: Preheat grill on HIGH (500°F). Season 3 lb whole beef tenderloin with 1 tablespoon oil and 2 teaspoons garlic/herb seasoning. Place meat over direct heat; grill 3–4 minutes on each side until browned. Reduce heat on grill to medium. Place meat over indirect heat and close lid (or cover); grill 40–45 more minutes, turning occasionally, until meat is 145°F for medium rare.

The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking beef, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.

Do not reuse marinades.
Do not rinse raw meat.
