Herb-Crusted Pork Loin Roast

Ingredients

  • 1 boneless pork loin roast (about 4–5 lb)
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • Aluminum foil
  • ¼ cup Italian herb paste

Steps

    1. Pat pork dry with paper towels. Season evenly on all sides with salt and pepper. Let stand 30 minutes at room temperature.
    2. Heat large skillet on medium-high 2–3 minutes. Add oil to pan; sear pork 2–3 minutes on all sides. Remove pork from pan and place on foil-lined baking sheet.
    3. Preheat oven to 350°F. Let stand 5–7 minutes until cool to the touch. Rub pork evenly with herb paste; roast 40–45 minutes until internal temperature reaches 160°F. Let stand 10 minutes to rest before slicing.
