Ingredients
- 1 boneless pork loin roast (about 4–5 lb)
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
- 3 tablespoons olive oil
- Aluminum foil
- ¼ cup Italian herb paste
Steps
- Pat pork dry with paper towels. Season evenly on all sides with salt and pepper. Let stand 30 minutes at room temperature.
- Heat large skillet on medium-high 2–3 minutes. Add oil to pan; sear pork 2–3 minutes on all sides. Remove pork from pan and place on foil-lined baking sheet.
- Preheat oven to 350°F. Let stand 5–7 minutes until cool to the touch. Rub pork evenly with herb paste; roast 40–45 minutes until internal temperature reaches 160°F. Let stand 10 minutes to rest before slicing.
